Escoffier (1846-1935) had many celebreties among his friends and admirers, including the actress Sarah Bernardt and Edward, Prince of Wales. Emperor Wilhelm called Escoffier chef of emperors and emperor of chefs.
This book is from the collection of Jozef Karel Pollen (d. 1958), chef in the royal household of Queen Wilhemina.
