The grapes for the Lourens River Valley are picked in the morning from the early hours until the outside temperature has risen to 24 degrees. Then they are selected at the sorting table on appearance, inflamed and crushed, Merlot slightly lighter than cabernet. The whey then goes from each grape variety separately for 12 to 20 days peel and fermentation. A quarter of the merlot undergoes a second fermentation on wooden vessels.
The different wines of merlot, cabernet sauvignon and cabernet franc are then aged 15 months on oak, assembled in the respective ratio of 55, 40 and 5 percent and the final blend matures for another 45 days on wood, extended for 9 months on a bottle.
Then the Lourens River Valley is beautiful with aromas of black cherries, cassis, strawberries, toasted bread and cedar. Also in the mouth are ripe red and black fruits alongside marzipan and a seductive vanilla and wood test. The wine is excellent in balance with soft tannic acids in respect of delicious fruit sauce, rounded with a wide and pleasant exciting length. Morgenster's parade horse is drunk - decanting is recommended .
